SERVES 1
Using spicy greens as an alternative to lettuce creates a totally different taste sensation.
•1 large flour tortilla
•2 tablespoons mayonnaise
•1 medium tomato, thinly sliced
•3 ounces sliced turkey
•3/4 cup pepper grass, arugula, watercress, or nasturtium leaves
1.Broil the tortilla lightly on one side.
2.Place the tortilla—broiled side down—on a plate and spread the entire surface with mayonnaise.
3.Place the fillings in order down the center of the tortilla.
4.Pull one third of the tortilla over the fillings and roll.
