These plump, moist biscuits are a wonderful complement to herbal tea and are only mildly sweet. They will keep for a long time because of the honey.

• 1 cup butter
• 1 cup honey
• 3 eggs
• 3 cups flour
• 3 teaspoons baking powder
• 1 tablespoon milk
• 2 teaspoons lemon flavoring or lemon juice
• 3–4 sprigs fresh lemon balm, chopped
Thoroughly cream the butter and honey. Add eggs and beat well. Add the dry ingredients, then the milk, flavoring, and lemon balm. Drop by spoonfuls on an ungreased baking sheet and bake 8 to 10 minutes at 375°F.
