Herbs in Butter: Society Garlic Butter

This is a strong garlic butter to which are added fresh chives and the pale lavender blossoms of society garlic. This butter is perfect for making industrial-strength garlic French bread.

• 1/2 pound unsalted butter
• 2 large cloves fresh garlic (or more, to taste), pressed
• 2 tablespoons chopped fresh chives
• 1/4 cup society garlic blossoms
Thoroughly blend the butter and garlic, then add the chopped chives and flowers and pulse just until mixed. Blend longer for a smoother texture.
