Try This At Home: Harvest Herbs For Herbal Vinegars

It’s easy to store your herb harvest as herbal vinegar. Place a handful of clean herbs (we like rosemary and tarragon) in a clean jar, cover with near-boiling vinegar, top with a plastic lid (vinegar will corrode metal) and leave in a warm spot out of direct sunlight for a few weeks.

Then remove the herbs, strain the vinegar and enjoy your aromatic, frugal, gourmet vinegar. To be safe, sanitize the jar and lid in boiling water. Also, use very clean herbs. Store your homemade vinegar in the refrigerator.
